3-Ingredient, Vanilla Protein Pudding (Vegan and Dairy Free)

White Chocolate Vanilla Protein Pudding 

Round two of my silken tofu protein pudding and this time it's made with white chocolate! I loved the dark chocolate version I made last week, and knew I had to find another flavour immediately so I could keep snacking on this epic, three ingredients, protein rich dessert or snack. 

White chocolate makes this pudding a little more sugary, but it's lighter, and almost has a sweet cream flavour. It's perfect for a snack or an after dinner dessert. You're going to love it!

Why You'll Love This Recipe

It's SO easy to make. Just melt the chocolate and add it to a blender with the other ingredients. Then set it in the fridge to firm, and you're good to go.

It's really high in protein! With two of the three ingredients being primary protein sources, it doesn't get more high protein than this when it comes to dessert.

It's customizable! You can add toppings, switch the chocolate flavour, or try a different protein powder. 

What You'll Need

Silken tofu or soft tofu is the star of this dish. It's what adds the creamy texture and soft base. 

Good quality protein powder. Because protein powder is a main ingredient you really want to make sure you love the taste of it. Substitutions

While there is not much to substitute when it comes to this exact white chocolate flavour, you can make chocolate or protein powder substitutions for different flavours!

Storing

I use the same glass meal prep containers every single week for bowls, puddings, and mains! These are my favourite glass bowls (pictured).

Vanilla White Chocolate Protein Pudding

Recipe makes 2 servings

Macros per serving: 

293 cals - 13g fat - 24g carbs - 20g protein 

 

Ingredients:

  • 1 package silken tofu (300g)
  • 1 scoop/serving vanilla protein powder (linked my favourite above!)
  • 1/4 cup vegan white chocolate chips, melted
  • 1 tsp vanilla extract, optional
  • 1 small pinch sea salt, optional 
  • a small handful berries to serve, optional 

 

Instructions:

  1. Add the chocolate to a microwave safe bowl or a small sauce pot. Gently melt the chocolate on low, low heat, stirring frequently. As soon as some of the chocolate melts you can remove it from the stove or microwave and gently stir it until it's fully melted. 
  2. To a blender add silken tofu, vanilla protein powder, and melted chocolate. If adding vanilla extract and salt, add it now too.
  3. Blend until you have a really smooth pourable mixture.
  4. Pour the mixture into one meal prep container, or two small meal prep containers. 
  5. Seal and refrigerate for 2-3 hours, or preferably overnight. 
  6. Once firm, top with fresh fruit or enjoy it as is!
