Chocolate Protein TrufflesÂ
These easy, vegan, chocolate protein truffles are a rich and decadent no bake way to get your chocolate cravings in with a boost of protein! The base is made with 5 simple ingredients, then rolled in melted chocolate and topped with chocolate sprinkles. The perfect snack to meal prep for you week.

What You'll Need
Tahini, or a preferred nut or seed butter. I like tahini as it's gentle in flavour and won't take the spotlight like peanut butter might.
Chocolate protein powder. I like Vedge Nutrition Chocolate Protein Powder for it's taste and texture. You can shop their protein using my discount code: EVANNRYAN.
Maple syrup or a preferred liquid sweetener.
Cocoa powder or cacao powder. Cacao powder (discount link) offers some additional benefits, but use what you have on hand.Â
Almond flour. By using almond flour it adds a nice fatty depth to the truffle texture, while also keeping them lower in carbs! You can substitute oat flour, but add 1/2 the amount to start and build from there.
Dairy free chocolate. I like using Enjoy Life Chocolate Chips.
Vegan chocolate sprinkles. I just recently found these Watkins Chocolate Decorating Sprinkles at Whole Foods Market and they're great!
Ways To Customize
- Looking for a lower calorie option? Skip the chocolate coating and the sprinkles and just roll up the healthy chocolate truffle dough and these are your new macros:Â 163 cals - 11g fat - 9g carbs - 7g protein.
- Go easy on the chocolate and use vanilla protein powder instead of chocolate. Even less chocolate? Skip the cocoa powder.
- Make them peanut butter chocolate truffles by using peanut butter in place of tahini.
- Add some espresso powder to boost the cocoa!

Chocolate Protein Truffles
Recipe makes 15 truffles
Macros per truffle:

Ingredients:
- 1 cup tahini (the runnier the better!)
- 1/2 cup almond flour
- 2 scoops chocolate protein powder (80g) discount code: EVANNRYAN
- 2 tbsp cocoa powder
- 1/3 cup maple syrupÂ
- 1/8 tsp saltÂ
- 2/3 cup chocolateÂ
- 1 tbsp extra virgin olive oilÂ
- 1/3 cup chocolate sprinkles

Instructions:
- To a mixing bowl add: tahini, almond flour, chocolate protein powder, cocoa powder, maple syrup, and salt.Â
- Mix everything together well forming a dough.
- Troubleshooting texture:
- If your dough is too wet, let sit for 10 minutes in the fridge, it can take a minute for the protein powder to absorb the liquids. Still too wet? Add a tbsp more protein powder until you reach desired consistency.
- If your dough is too dry, add a little more tahini OR maple syrup. Don't want to add the extra calories? You can try adding in a tbsp or two of plant milk. Mix until desired consistency.
- Lay a piece of parchment onto a large plate or sheet pan. Set aside.
- Once you have a nice dough, roll them into 15 balls, and place them on the parchment paper. Set aside.Â
- Add the chocolate and olive oil to a small microwave safe dish, or into a small pot over the stove, and melt gently on low heat. Stir constantly so the chocolate doesn't burn.
- Once chocolate is melted (if it's in a pot - add it to a small bowl) add the chocolate truffles, one by one, into the melted chocolate. Use a spoon to gently flip the truffle around in the chocolate, then use a fork to scoop the truffle out. Hold the truffle on the fork over the chocolate bowl for 10 seconds or so, to allow the excess chocolate to fall off.
- Add the chocolate coated truffle to the parchment lined plate and top with sprinkles.Â
- Repeat with all the truffles.Â
- Once done, add the truffles to the fridge to firm up the chocolate, 20 minutes.
- Truffles are done was chocolate has set.Â
- Place the chocolate truffles into a meal prep container and seal.Â
- I like to keep them in the fridge, but you can keep them on the counter if preferred, or freeze them for another day!
