Frozen Protein S'mores

But make'em higher in protein and low in carbs! These treats have been floating around the internet for quite some time now and I can't believe I haven't made them yet. The original instagram version uses graham crackers as the base and top, just like the OG campfire s'mores, but we like to do things a little different around here. You know, like cram in the protein ;)

  • Gluten free, dairy free, and low carb. 
  • Freezer treats are the best because they last so long! 
  • They're only 157 calories & 9g protein each, making them a really diet friendly option.

 

What you'll need:

  • Peanut butter powder. You can buy this on Amazon, likely at your local supplements shop, and recently at my Costco (hopefully yours too, because the price is great!)
  • Almond flour. I buy mine the Kirkland brand at Costco, but you can likely find this at your grocery store as well!
  • Vanilla protein powder. I loveee the Vedge Vanilla Ice Cream Protein and it's quite literally perfect for this recipe. 
  • Coco whip. The vegan version of cool whip.
  • Chocolate. I've been a Zazubean chocolate girlie for years now. I love all their flavours, and that they're vegan, low sugar, and made with real cacao. They also have keto options!

 

Method:

Ideally you place the coco whip into the fridge (out of the freezer) one to two hours prior to making this. It will be easier to mix that way. Forgot, or don't have time? No worries, you can whip it extra hard.

Then you're just going make the peanut butter protein bar base, smashing it down into a pan. Then whip coco whip and protein powder together, smoothing that over the peanut butter bar. Lastly you'll melt some chocolate and drizzle it over the top. Easy, peasy!

Frozen Protein S'mores 

Recipe makes 16 squares

Macros per square:

157 cals - 9g fat - 10g carbs - 9g protein 

 

Ingredients:

1 cup peanut butter powder

3/4 cup almond flour

3 scoops vanilla protein powder 

1 1/4 cup water

1 container cocowhip  (255g)

80g chocolate bar, melted (about 1/2 cup chocolate chips melted)

1/2 tsp coarse sea salt to garnish (optional)

 

Instructions:

To a mixing bowl add: peanut butter powder, almond flour, 2 scoops vanilla protein powder, and 1 cup water. Mix well forming a dough. You likely need to get in there with your hands. 

Depending on the protein powder you've used, you may need to add up to 1/4 cup more water to form a smooth dough. (Using Vedge Protein I did!).

Line an 8 x 8 inch baking dish with parchment paper.

Add the peanut butter dough to the dish and press down flat, covering the entire bottom of the baking dish. Set aside.

To a mixing bowl add: coco whip and 1 scoop vanilla protein. Whip them together until completely combined.

Spread the coco whip/protein mixture over the peanut butter bar base, smoothing from edge to edge. Set aside.

Melt the chocolate over a double broiler or gently in the microwave, stirring often.

Drizzle the chocolate over the bars. 

Option to use a toothpick or the long end of a piece of cutlery, to swirl the chocolate around the top and into the coco whip layer.

If desired, top with coarse sea salt. 

Add the bars to the freezer to firm up completely, 2hr or overnight. 

Once firm, slice into 16 bars and seal in a freezer safe container. 

When ready to eat, remove from the freezer and set on the counter for 10 minutes for best texture.
