So many favourite things in one recipe: cookie dough, protein yogurt, and cheesecake. Armin saw me eating it silently this morning staring longingly into it at every bite.. I'm rarely silent in the morning. It's that good.

What You'll Need
Plain vegan yogurt. I like coconut yogurt personally, but any preferred plain yogurt will do.
Good quality protein powder is essential. You want the protein you're using to be soft and smooth, never gritty. My personal favourite is Vedge Nutrition because they're smooth like butter, non-GMO, organic, and third party tested. Peanut butter or a preferred nut or seed butter. Cashew butter would be great here too!
Lemon juice and vanilla bean. Lemon makes it cheesecake like, and vanilla bean brings in the cookie dough flavour.
Dairy free chocolate chips. I tend to always go for Enjoy Life.Â
Vegan graham crackers, or another kind of simple vegan cookie.Â
Melted vegan butter to make the cookie crumb.

Cookie Dough Cheesecake Protein Yogurt
Recipe makes 4 servingsÂ

Ingredients:
- 3 cups plain coconut yogurt
- 160g vanilla protein (4 servings) (discount/affiliate code: EVANNRYAN)
- 2 tbsp peanut butter
- 3 tbsp lemon juice
- 1 tbsp vanilla bean powder or vanilla extract (discount/affiliate code: EVANN10)
- 1/4 tsp saltÂ
- 1/4 cup mini chocolate chipsÂ
- 16 vegan graham crackers
- 2 tsp melted vegan butterÂ

Instructions:
- To a mixing bowl add: coconut yogurt, protein powder, peanut butter, lemon juice, vanilla, and salt. Whip together until super smooth.
- Fold in chocolate chips.
- Divide the mixture across four containers, smooth the tops, and set aside.
- Add the graham crackers to a blender and pulse into a crumb.
- Pour the crumb into a bowl and add melted butter.
- Mix until you have a wet sand like texture.
- Divide the graham cracker mix across the cookie dough containers.
- Smooth the tops, seal and refrigerate until ready to eat!
- Enjoy!
