Creamy Spinach Butter Beans

Creamy, rich, one pot spinach butter beans are a delicious, fiber packed way to start your day! Enjoy over potatoes, on toast, on a bun, or as is!

 

Recipe notes:

To make this gluten free simply enjoy over gluten free bread or potatoes!

Most beans have a really similar macro profile so feel free to switch out the butter beans for cannellini or chickpea if preferred.

 

Recipe makes 3 servings

Macros per serving, just spinach beans:

321 cals - 5g fat - 50g carbs - 21g protein

Macros per serving beans + two slices whole grain toast:

494 cals - 6g fat - 84g carbs - 26g protein

 

Ingredients:

2 tsp olive oil

1 yellow onion, diced

2 cloves garlic, chopped

1 heaping tbsp tomato paste

1/2 cube vegetable soup base

796ml canned butter beans

1 cup oat milk

1/2 cup water

1/3 cup nutritional yeast

3 cups packed, fresh spinach

1 tbsp lemon juice

1 tsp salt

3 whole wheat buns or GF buns if preferred

Optional topping: purple cabbage saurkraut

 

Recipe:

Preheat a pan to medium low.

Add oil and coat the bottom.

Add in diced onion with a pinch of salt, cook for 3-4 minutes.

Add in chopped garlic, cook 1 minute.

Drain and rinse butter beans and add to the pan.

Add tomato paste, soup base, oat milk, water and nutritional yeast.

Cook on a low simmer for 15-20 minutes or until liquids have reduced by 1/2.

Add spinach and cook until wilted through.

Turn off heat and add in lemon juice and salt.

Serve over toasted bread, buns, or enjoy as is!

Option to top with purple cabbage sauerkraut as pictured.
