Peanut Butter Protein Cookies 

Protein cookies without protein powder! These are super easy to make, very lightly sweet, and the perfect amount of chewy on the inside and crispy on the outside. Why protein cookies? Well to start, they're not to replace regular cookies. If you want something sweet for dessert or your craving grandmas chocolate chip cookies then definitely grab or make some of those. But if you're looking for a healthy, fibre rich, snack with added protein to keep you full between meals then a protein cookie is a great option!

Why is protein at snack time a good idea? Well if you're actually hungry and not just snacky (craving something sweet or salty) then having a protein rich snack like these protein cookies will help to actually fill you up and keep you satisfied and energized between meals. Having a protein rich snack is also a great way to add to your daily protein total if you have a specific goal. For me personally, I aim for 90-100g of plant protein per day. So with a boost of 14g from these protein cookies at snack time I'm well on my way to reaching my daily goal.

What You'll Need:

  • Oat flour, all purpose flour, or your favourite gluten free flour blend. These cookies are pretty flexible when it comes to the flour, so use what you have on hand!
  • Peanut butter powder. This is what gives it that protein boost without using protein powder. Peanut butter powder is defatted peanuts, so you're left with all the protein and way less calories. Could you sub regular peanut butter? Yes, most likely. Just keep in mind the macros will change significantly. 
  • Almond milk, or you preferred dairy free milk. 
  • Maple syrup or your preferred liquid sweetener. The cookies are not very sweet, so if you want a sweeter cookie add more maple syrup!
  • Dairy free chocolate chips, or whatever mix-in's you like best!

Please note: all calories have macros have been calculated to the best of my ability but may vary slightly.

 

Peanut Butter Protein Cookies 

Recipe makes 4 snack cookies

Macros per cookie:

252 cals - 12g fat - 22g carbs - 14g protein

 

Ingredients:

  • 1/2 cup oat flour or all purpose flour or whole wheat flour
  • 1/2 cup peanut butter powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond milk
  • 2 tbsp peanut butter
  • 1 tbsp maple syrup 
  • 1 tsp vanilla extract 
  • 3 tbsp chocolate chips
  • 1 tsp flaky sea salt, optional

 

Instructions:

1. Preheat the oven to 350 F.

2. To a mixing bowl add: oat flour, peanut butter powder, baking soda, and salt. Whisk together.

3. Add in almond milk, peanut butter, maple syrup, and vanilla extract.

4. Fold everything together forming a dough.

5. Fold in chocolate chips.

6. Add prepared cookie dough to the fridge for 30 minutes.

7. Roll cookie dough into 4 large cookies and top with flaky sea salt if desired.

8. Bake for 12-14 minutes or until lightly browning on the bottom.

Troubleshooting cookie dough texture:

If the dough is too dry: add 1 tbsp additional almond milk at a time until you have a nice, sticky cookie dough texture.

Too wet? Sticking it in the fridge for the 30 minutes should help!
