Strawberry Shortcake Protein Pudding

Adding a fresh, spring flavoured dessert to the protein pudding flavour lineup with this light strawberry shortcake version! With 21g of protein per serving this dessert doubles as a high protein snack!

Rather skip the fresh baked scones? Buy store bought scones and chop them up and add them in as written in the recipe below. Alternatively you could try vanilla cookies from health food companies like GluteNull, Made Good, or Simple Mills!

Recipe makes 3 servings

Macros per serving:

258 cals - 10g fat - 21g carbs - 21g protein

 

Ingredients:

1 cup vegan greek yogurt

40g vanilla protein powder or 3 scoops Nuzest Smooth Vanilla (discount link)

1/2 cup strawberries, chopped

2 mini vanilla bean scones - see recipe notes

 

Recipe:

Make your vanilla bean scones and allow them to cool.

To a mixing bowl add: greek yogurt and vanilla protein.

Mix gently until you can easily whip the protein into the yogurt without the powder flying out. See recipe video, linked in notes, for a visual.

Add in chopped strawberries and 2 chopped scones.

Divide into three small containers.

Enjoy!
