| BLUEBERRY OATMEAL SQUARES |
These blueberry oatmeal squares taste like a freshly baked protein bar in that they’re thick and dense while still being fresh and tart from the blueberries packed into every bite. I highly recommend enjoying them with some extra fresh blueberries on top! Balanced with fiber and protein this delicious bake can easily be customized with different add-ins. Try a different fruit, chocolate chips, nuts, seeds, or keep it plain!

Recipe notes:
The oats and hemp seeds have been blended to make for a more cake like square. You can keep the oats and hemp seeds whole if preferred.

Ingredients:
1 banana
1/4 cup date sugar (see recipe notes)
1/4 cup tahini
1/2 cup oat milk
1 tsp vanilla bean powder or extract
1 cup sprouted oats
1/4 cup hemp seeds
65g vanilla protein
1 tsp baking powder
1/4 tsp salt
1 cup blueberries
Optional glaze:
2 tbsp coconut butter
1 tbsp lemon juice
1/3 cup oat milk
Recipe:
Preheat the oven to 350 F and line a small 6x6 inch pan, set aside.
To a blender add: sprouted oats and hemp seeds.
Blend until you have a fine flour.
Pour the flour mixture into a bowl.
Add all your wet ingredients to the blender: banana, date sugar, tahini, oat milk, and vanilla and blend until smooth. Pour the wet ingredients into a mixing bowl.
Add to the wet ingredients: flour mixture (oats & hemp), vanilla protein, baking powder, and salt.
Gently fold everything together until just combined.
Fold in the blueberries.
Pour the mixture into the prepared baking dish and bake for 16-18 minutes or until lightly browning around the edges. Allow to cool completely before slicing into 4 squares.
Optional Lemon Coconut Glaze:
Add the glaze ingredients to a small pot and warm on low heat until you can mix it smooth. Drizzle over bars. Glaze macros per serving:
