Gluten Free High Protein Avocado Toast

It's easy to love avocado toast. Creamy, salty, avocado slathered on thick, crunchy bread maybe some cracked black pepper or chili flakes on top, delicious! But by now we all know protein is essential to a balanced diet and a simple avocado and bread just doesn't add up to many protein grams. The good news is this recipe gives you your avo toast and your gains too! With sneaky bites of tofu mixed into a fresh and summery corn salad, you'll be hitting your protein goals without even realizing it.

Recipe makes two servings

Macros per serving:

520 cals - 20g fat - 61g carbs - 24g protein 

 

Ingredients:

4 thin slices or two thick slices GluteNull Amaranth Bread

1 avocado

1/2 brick fava tofu or extra firm tofu, cubed

3/4 cup corn kernels

1/2 tomato, chopped

1/4 cup diced red onion

1/4 cup loose chopped cilantro or preferred herb 

2 tbsp sriracha mayo 

1 tbsp lime juice 

1/4 tsp salt

1/4 tsp black pepper 

 

Recipe:

Preheat the oven to 375 F and line a baking tray with parchment paper.

Cut the tofu into small cubes and spread across the baking tray.

Bake until golden, 12-14 minutes. 

To a mixing bowl add: corn, chopped tomato, red onion, cilantro, sriracha mayo, lime juice, salt, pepper, and baked tofu cubes. Tossing well to combine. Set aside.

Heat a pan to medium heat.

Lightly oil the bread and add to the hot pan.

Cook bread until it's nice and crispy, 3-4 minutes, flip and cook the other side until crispy, 2-3 minutes.

Plate the crispy toast and divide the avocado across each piece.

Top with corn salad.

Add a squeeze of fresh lime and enjoy!

 

**You may have more salad than can fit onto your toast so enjoy it as a side salad as the macros fit everything listed into them :) **
