High Protein Spicy Tomato Toast with Tofu "Eggs"

| HIGH PROTEIN SPICY TOMATO TOAST WITH TOFU "EGG" PATTIES | Spicy, crunchy, fresh, and salty. If you like a savoury start to your morning then this high protein breakfast toast is a great way to spice things up!

Made with the tofu "egg" patties from my high protein vegan breakfast ebook, this is fancy version of a basic meal I eat all the time to reach my morning protein goals. 

 

Recipe makes three servings

Macros per serving (no bread, so you can add your own):

297 cals - 21g fat - 8g carbs - 19g protein 

Macros per serving using Cobs Turkish Bread Roll:

526 cals - 26g fat - 48g carbs - 25g protein 

 

Ingredients, Tofu Egg Patties:

  • 350g extra firm tofu
  • 1/4 cup full fat coconut milk, canned (see notes)
  • 1 1/2 tbsp nutritional yeast
  • 1/8 tsp turmeric powder
  • 1/4 tsp salt
  • 2 tbsp water
  • option to add kala namak

Ingredients, Tomato Salad:

  • 2 small tomatoes, chopped into chunks
  • 1 tbsp chili oil 
  • 1 tbsp vegan mayo 
  • 1/4 cup chopped, fresh parsley
  • 1/2 tsp salt

Tofu Patties:

In a large container or bowl add coconut milk, nutritional yeast, turmeric powder, salt, and water. Whisk to combine.

Slice the brick of tofu into 6 rectangles and submerge into marinade, coating every side.

Bring a pan to medium heat and add the seasoned tofu pieces.

Cook on the first side until browned and crispy. Flip and repeat on the other side until golden.

Set tofu "eggs" aside to cool.

 

Tomato Salad:

To a bowl add the chopped tomatoes, chili oil, mayo, parsley, and salt. Mix well to combine.

Chop the cooked tofu patties into mismatched shapes and add to the tomato mixture.

Mix everything well to combine.

Toast the bread and top with the tofu and tomato mixture.

Option to season with sesame seeds, more chili oil, or a drizzle of vegan honey!

For meal prep - keep the tomato/tofu mixture in a sealed container in the fridge. When ready to eat toast your bread and top with mixture.
