Strawberry Chia Protein Pudding

If you're into meal prep then this easy, protein packed chia seed pudding is going to become a staple for you! The super simple recipe comes together all in one big bowl then just add the melted and smashed strawberries, top with yogurt and when ready to eat just add your favourite crunchy granola for a well rounded, omega and probiotic rich breakfast staple.

 

Recipe notes:

You can switch up the fruit here! Add in fresh chopped kiwis, mango, or a citrus fruit like grapefruit! 

The macros don't include the granola but it does add a really nice crunchy texture so I do recommend adding it. I left it out of the macros simply because every granola macro breakdown is so different. This way you can easily add your granola macros on top!

 

Recipe makes 4 servings

Macros per serving:

351 cals - 15g fat - 34g carbs - 20g protein

 

Ingredients:

3/4 cup chia seeds

50g vanilla protein powder

1 1/2 cups oat milk or preferred dairy free milk

1 1/2 cups water

3 cups frozen strawberries

1 cup plain vegan yogurt, or vanilla if preferred!

 

Optional: granola topping (not included in macros)

 

Recipe:

To a large mixing bowl add: chia seeds, vanilla protein powder, oat milk, and water.

Whisk until combined really well. 

Let rest for 5 minutes to thicken.

Whisk again, removing any clumps.

Set in the fridge to firm up completely, 30 minutes or overnight!

Add your frozen strawberries to a pot and place over medium heat.

Stir and smash the strawberries until they're nice and jam like.

Remove from heat and allow to cool completely in the fridge. 

Once everything is ready divide your chia seed pudding across four containers or jars and layer with strawberries.

Top with 1/4 cup each vegan yogurt.

Option to add granola and date syrup or preferred sweetener.
