| TEMPEH LETTUCE & TOMATO | BLT

Tempeh is packed with protein, probiotics, vitamins, and essential minerals, making it an amazing protein source for vegetarians and vegans alike!

Recipe makes two sandwiches
Macros per sandwich:
436 cals - 20g fat - 37g carbs - 27g protein
Ingredients, Bac'un:
- 225g tempeh
- 1 tbsp olive oil
- 1 tbsp hot sauce
- 1 tbsp apple cider vinegar
- 2 tbsp liquid aminos (or soy sauce)
- 1/2 tbsp maple syrup
- 1 tsp smoked paprika
- 1/4 tsp salt
Ingredients, Sandwich:
- 4 slices whole wheat bread, I used Silver Hills Little Big Bread
- 1 tomato, sliced into thick rounds
- 2 tbsp pesto
- 1/4 cup plain vegan yogurt
- 1 cup lettuce
Recipe, Bac'un:
Prep tempeh by slicing the brick into 5 long pieces.
Then take each thick strip and slice into three thin bac’un slices.
Lay the tempeh pieces flat across a shallow pan, and set aside.
To a small bowl add: olive oil, hot sauce, apple cider vinegar, soy sauce, maple syrup, smoked paprika, and salt, whisking to combine.
Pour the marinade over the tempeh evenly then flip any pieces that aren't completely covered.
Place tempeh in the fridge for a minimum of 30 minutes and up to overnight to marinate.
Preheat the oven to 350 F and bake the tempeh bac’un for 10-12 minutes, flip each piece, and bake for 5-7 minutes longer or until bac’un is crispy.
Sandwich:
For the creamy pesto add the pesto and yogurt to a small bowl or ramekin and mix well to combine.
Toast your bread, and add to each sandwich: 5 slices bac’un, a few thick slices of tomato with salt and pepper, creamy pesto spread and lettuce.
