So many favourite things in one recipe: cookie dough, protein yogurt, and cheesecake. Armin saw me eating it silently this morning staring longingly into it and at every bite.. I'm rarely silent in the morning. It's that good.
Recipe makes 4 servings
Macros per serving:
478 cals - 22g fat - 34g carbs - 36g protein
Ingredients:
3 cups plain coconut yogurt
160g vanilla protein (4 servings) (discount/affiliate code: EVANNRYAN)
2 tbsp peanut butter
3 tbsp lemon juice
1 tbsp vanilla bean powder or vanilla extract (discount/affiliate code: EVANN10)
1/4 tsp salt
1/4 cup mini chocolate chips
2 tsp melted vegan butter
Recipe:
To a mixing bowl add: coconut yogurt, protein powder, peanut butter, lemon juice, vanilla, and salt. Whip together until super smooth.
Fold in chocolate chips.
Divide the mixture across four containers, smooth the tops, and set aside.
Add the graham crackers to a blender and pulse into a crumb.
Pour the crumb into a bowl and add melted butter.
Mix until you have a wet sand like texture.
Divide the graham cracker mix across the cookie dough containers.
Smooth the tops, seal and refrigerate until ready to eat!
