Chocolate Peanut Butter Protein Cups

These protein packed double chocolate peanut butter cups are made without sugar, pack 13g protein per serving, and are totally low carb! They're great straight from the fridge or keep a batch in the freezer to keep them on hand for weeks!

Made with Botanica Health's Perfect Protein in Chocolate flavour for a dense, and fudgy chocolate protein base made from coconut, quinoa, and brown rice. Their protein is certified organic, stevia free, and contains zero fillers.

Recipe notes:

I've used peanut butter powder instead of regular peanut butter to keep these low in calories while boosting the protein significantly. You can however use regular peanut butter for a richer finish.

To keep them sugar free make sure to use a sugar free or keto chocolate.  I used Zazubean's zero added sugar bars. 

 

Recipe makes 8 cups

Macros per serving:

205 cals - 13g fat - 9g carbs - 13g protein 

 

Ingredients, base:

2/3 cup + 2 tbsp peanut butter powder

3/4 cup water

1/2 cup Botanica Chocolate Protein (1 1/4 scoops)

1/2 cup almond flour 

 

Toppings:

5 tbsp peanut butter powder

3-4 tbsp water

1/4 cup peanuts 

80g chocolate 

sea salt

 

Recipe:

To a mixing bowl add 2/3 cup + 2 tbsp peanut butter powder and 3/4 cup water. Mix until you have a runny peanut butter.

Add in Botanica Chocolate Protein and almond flour.

Mix forming a dough. You may need to use your hands. 

Line a muffin tray with 8 liners.

Divide the prepared base/dough into the liners, smoothing the tops of each. 

In a small ramekin or bowl add: 5 tbsp peanut butter powder and 3-4 tbsp water. Mix until you have a thick peanut butter.

Divide the thick peanut butter across the 8 prepared cups.

Top each with a few peanuts.

Melt the chocolate and drizzle over each cup.

Top each with sea salt if desired.

Set in the fridge to firm the chocolate.

Remove each cup from their liner and add to a container. Seal and refrigerate until ready to eat!
