| CLASSIC PEANUT BUTTER COOKIES |
These FOUR ingredient cookies couldn't be easier to make! They're also totally customizable. At my store we actually didn't make this specific peanut butter flavour very often but had an almond butter version everyday (until sell out!). The almond butter version fit more diets in that they were paleo and peanut free. We also added chocolate chips to make a super rich almond chocolate chip cookie!Â
You can customize these by using any nut butter of choice and adding in whatever mix-ins you like! Think cashew butter with cranberries or peanut butter and white chocolate!

Recipe makes 12 cookies
Macros per cookie:

Ingredients:
1 cup peanut butterÂ
1/2 cup coconut sugar
2 tbsp flax meal + 6 tbsp water (flax "egg")
1/2 tsp baking soda

Recipe:
Preheat the oven to 350 F and line a baking tray with parchment paper.
Add the flax meal and water to a small bowl, mix and set in the fridge to gel, 5 minutes.
Add to a mixing bowl nut butter, coconut sugar, flax "egg" and baking soda.
Fold everything together well.
Roll into 12 cookies and press each cookie mound down slightly.Â
Bake for 8 minutes or until browning at the edges.
Because these have no flour, you'll need to allow them to cool before removing from the tray or they might break.
