Mini Snickers Bars

| MINI SNICKERS BARS|

A much healthier, lower in fat & carbs version of everyones favourite candy bar! The perfect meal prep freezer treat with a touch of protein to boost your daily intake at dessert!

 

Recipe makes 8 mini bars

Macros per bar:

146 cals - 6g fat - 15g carbs - 8g protein

 

Ingredients:

1/3 cup + 1 tbsp peanut butter powder

1/4 cup water 

1/4 cup almond flour

1/4 cup vanilla protein powder (discount/affiliate link, code: EVANNRYAN)

8 dates, pitted 

2 tbsp peanuts, chopped/crushed

3 tbsp vegan milk chocolate (discount/affiliate link, code: EVANNRYAN)

 

Recipe:

To a mixing bowl add peanut butter powder and water. Whip until you have peanut butter.

Add in almond flour and vanilla protein.

Fold together forming a dough. 

If the batter is too dry add 1 tbsp at a time additional water until you have a dough texture.

Cover a small cutting board or plate that fits into the freezer with parchment paper.

Add the dough to the parchment lined surface and form a small flat rectangle. Then set aside.

Grab the dates and pit them if needed, then smoosh them as much as possible so the 8 dates can cover the rectangular dough from edge to edge.

Once the dough is covered in a date layer, spread the crushed peanuts from edge to edge. Set aside.

Add the chocolate to a small microwave safe bowl or a small sauce pot and gently melt the chocolate, making sure to stir every 5-10 seconds.

Pour the melted chocolate over the peanut layer.

Using a spoon drag the chocolate across the bar covering the entire surface. 

Place the entire thing in the freezer to firm, minimum 1 hr.

Cut into 8 small bars.

Place in a freezer safe container, seal, and freeze until ready to snack!
