Mint Chocolate Coconut Patties

| MINT CHOCOLATE COCONUT PATTIES |


If you like mint, chocolate, and coconut, then you have to try these coconut mint patties with vanilla protein!!! They could not be easier to make with a simple one pot method, a melt of Zazubean’s Lunatic Mint & Cocoa Nib Bar, refrigerate and SNACK!


These are what they call in the keto world – Fat Bombs! They pack a luxurious amount of rich coconut from both the butter and the shreds. So while they’re not a protein powerhouse, they will keep you absolutely full and satisfied come snack or dessert time.


Recipe makes 12 mint patties

Macros per patty:

231 cals - 19g fat - 10g carbs - 5g protein


Ingredients:

2 Zazubean Lunatic Bars 

¼ cup coconut butter

½ cup soy milk

1-2 tbsp peppermint extract

¼ tsp stevia

25g vanilla protein 15% off affiliate link and/or use code: "EVANNRYAN"

2 cups shredded coconut, unsweetened


Recipe:

To a small sauce pan add: coconut butter, soy milk, peppermint extract and stevia.

Bring heat to low and stir constantly until coconut butter is fully melted and everything is combined.

Remove from heat and stir in vanilla protein powder. It will be pretty thick and almost clumpy.

Add in coconut shreds and using your hands or a spatula mix everything together well.

Line a muffin tin with liners.

Divide the coconut batter into 12 muffin liners, pressing and smoothing the tops of each.

Set in the freezer to get really firm, 1-2 hrs.

Gently melt Zazubean Lunatic Bars over a double broiler or in the microwave.

Line a baking tray or plate with parchment paper.

Gently drop each frozen coconut cup into the melted chocolate, coating each side.

Set each coconut cup on the parchment lined sheet.

Once all the coconut cups are covered in chocolate, place in the fridge to finish firming the chocolate.

Keep Coconut Mint Patties in the fridge until ready to eat.
