No Bake Blueberry Crumble Bars

These wild blueberry oat bars are no bake, naturally sweetened, and dense with plant-based fiber. Simple to make, and perfect for meal prep. Grab a 20% discount on the all natural date sweetener on my landing page!


Recipe makes 12 bars

Macros per bar:

242 cals - 14g fat - 21g carbs - 8g protein 


Ingredients, blueberry jam:

1 ½ cup frozen blueberries

2 tbsp chia seeds 

1 tbsp date syup 

1 tbsp lemon juice 


Base:

1 cup peanut butter

1 ¼ cup oat flour (sprouted oats blended)

2 tbsp date syrup


Crumble:

2 tbsp sprouted oats 

2 tbsp oat flour (sprouted oats blended)

2 tbsp peanut butter

1 tbsp date syrup 


Recipe:

Add your frozen blueberries, lemon juice and date sugar to a sauce pot and bring to medium low heat

Allow blueberries to cook 4-5 minutes, or until bursting

Smash the blueberries with the back of a spatula 

Remove from heat and stir in chia seeds, set aside to gel, 10 minutes 

Base: to a mixing bowl add peanut butter, oat flour, and date syrup, mixing until a dough forms

If the base is too sticky add 1 tbsp at a time oat flour

Too dry, add 1 tbsp peanut butter at a time

Line a sheet with parchment paper and spread the base across it forming a rectangle

Evenly spread your blueberry jam over the base, set aside

Crumble: add all the crumble ingredients into a small bowl and mix with your hands, forming a loose and crumbly mixture

Evenly spread the crumble across the bars

Set the bars in the fridge so the jam can cool completely 

Once cooled, slice into 12 small squares 

Keep in a sealed container in the fridge all week!
