Raspberry Vanilla Ice Cream Sandwiches with Protein

| RASPBERRY VANILLA ICE CREAM SANDWICHES | Gluten free & Vegan.

These are a must make. They're SO simple, you can literally choose any ice cream flavour or cookie you like. They're decently macro friendly given they've been given a protein upgrade and we've added antioxidant rich raspberries to them so you're basically eating a fruit and oatmeal (cookie) sandwich.

 

Recipe makes 10 sandwiches

Macros per sandwich:

237 cals - 9g fat - 30g carbs - 9g protein

 

Ingredients:

1 pint Haagen Daz vegan vanilla raspberry truffle ice cream 

85g vanilla protein powder  (10% off discount/affiliate link)

1 cup frozen raspberries

2 bags Prana Organic Cookie Squares 

 

Recipe:

Empty the entire container of ice cream into a mixing bowl and set in the fridge for 30 minutes. Just enough to soften.

Add in vanilla protein powder and mix really well.

Fold in raspberries.

Scoop the ice cream into a square silicone ice cube tray and smooth the tops. 

Alternatively, spread the ice cream into a square or rectangular pan, smoothing the top.

Add back to the freezer to firm up completely, 2-3 hrs or overnight.

Line plate or cookie tray that fits into the freezer with parchment paper. Set aside.

Open the cookie bags and grab all the perfect ones (ones that aren't broken) and set aside.

Remove ice cream from the freezer and slice into 10 squares. 

Make the cookie sandwiches with two cookies and one ice cream square then place it on the parchment lined plate or tray.

Once all sandwiches are made place back in the freezer until firm again.

Seal in a freezer safe container.

Enjoy straight from the freezer when ready to eat!
