Vegan & Gluten Free Thin Mint Cookies

Recipe makes 18 cookies

Macros per cookie:

147 cals - 11g fat - 8g carbs - 4g protein 


42g chocolate protein

¼ cup + 2 tbsp cacao powder

½ cup nut butter

2 tbsp date syrup

½ cup water

1 tsp peppermint extract 

2 Zazubean Lunatic Bars 


Preheat the oven to 350 F and line a baking tray with parchment paper, set aside.

To a mixing bowl add: chocolate protein, cacao powder, nut butter, date syrup, water, and peppermint extract. Mix well, forming a thick dough.

Spoon 18 small cookie balls onto a baking sheet, then press them down into thin circles.

Bake for 14-16 minutes or until crispy.

Allow to cool completely. 

Melt the Zazubean Lunatic Bars gently over a double broiler or in the microwave.

Pour into a bowl and dip each cookie into it, soaking both sides in chocolate, but using a spoon to scrape off any excess chocolate. You want it to be a thin layer.

Place on a parchment line sheet and set in the fridge or freezer to firm up quickly. 

Cookies can be kept at room temp, in the fridge, or freezer.
