| GOMA-AE BOWL |
Inspired by the tasty Japanese side dish goma-ae salad, this bowl uses the wilted spinach and fresh sesame sauce, and pairs it with steamed tofu, and white rice for a flavour packed meal!
Goma-ae is traditionally made from whole toasted sesame seeds and a mortar and pestle, but we simplified this by using creamy tahini.
Recipe makes 3 servings

Ingredients
350g extra firm tofu, cut into cubes
1 1/2 cups cooked white rice, or preferred rice
6 cups packed, fresh spinach
2 tbsp tahini
3 tbsp liquid aminos (soy sauce)
2 tsp coconut sugar
1-3 tbsp water
1 sheet of nori, chopped
Recipe
Cook the rice according to package directions. Set aside.
Add 3-4 ice cubes to a bowl with 4 cups cold water. Set aside.
Bring a 6 cups water to a boil and add a big pinch of salt.
Add in spinach and stir through.
Cook spinach for just a minute, until it's wilted through.
Immediately drain the spinach and add to the ice water bowl.
Allow to chill in the ice water until completely cold.
Drain the spinach well, pressing any excess water out.
I like to chop the cold spinach down a bit, as I find this more enjoyable to eat.
If you have a steamer basket, add the tofu to the basket, and add cup of water under. Place a lid over the pan and bring water to a boil.
Steam the tofu until the water evaporates, 5-7 minutes.
No steamer basket? Just add the tofu to a pan with a few tbsp of salted water and steam in the water for 5-7 minutes. Gently press any excess water out of the tofu.
To 3 bowls or meal prep containers add: 1/2 cup rice, 1/3 of the tofu, 1/3 of the spinach, and 1/3 of the chopped nori sheet. Set aside.
In a mixing bowl or blender add the sauce ingredient: tahini, soy sauce, coconut sugar, and 1 tbsp water. Blend until you have a smooth consistency. Add 1-2 tbsp more water to reach desired consistency.
Pour the dressing over the three bowls.
Top with sesame seeds if desired.
