Low Carb Lasagna Roll Ups

Recipe makes 4 large servings

Macros per serving:

302 cals - 14g fat - 20g carbs - 24g protein 

Ingredients:

500g firm tofu 

1 yellow onion

¼ cup nutritional yeast

⅓ cup soy milk

1 tsp garlic powder

1 tsp salt

1 tsp black pepper

2 cups chopped wilted spinach

2 bag Palmini Lasagna Noodles

1 ½ cup marinara sauce


Vegan liquid mozzarella, 4 servings:

⅓ cup cashews, soaked in boiling water for 10 minutes

¼ cup tapioca flour

1 ½ tbsp nutritional yeast

1 tbsp lemon juice 

1 tsp salt 


Recipe:

Preheat the oven to 375 F. 

To a blender add: tofu, ½ of the yellow onion, nutritional yeast, soy milk, garlic powder, salt, and black pepper. Blend until smooth.

Pour mixture into a mixing bowl.

Finely chop the other half of the onion and add it to the mixture. 

Add the chopped spinach. 

**Spinach: you can buy frozen chopped spinach, or add roughly 200g fresh spinach to a pot of boiling water for 1 minute. Drain, and chop.**

Add ½ cup marinara to the bottom of a lasagna pan. 

Drain and rinse the Palmini Lasagna Noodles.

Using a plate, place the lasagna noodle vertically and add a heaping tablespoon of tofu mixture to the bottom end of the noodle. Gently roll the noodles once.

Add the roll up to the pan and repeat until the bottom of the pan is full.

Add another ½ cup marinara and spread it across the roll ups. 

Repeat making the roll ups until you’ve used all the noodles and tofu mixture.

Add another ½ cup marinara and spread evenly across the top of the roll ups. 

To make liquid mozzarella:

Add everything to a blender and blend until super smooth.

Drizzle ¼ of the mozzarella mixture across the pan, edge to edge.

Bake the lasagna roll up for 30-35 minutes or until mozzarella looks browned.
