Low Carb Vegan Chorizo Pasta

Recipe makes two servings

Macros per serving:

456 cals - 24g fat - 34g carbs - 26g protein



1 pack Palmini Angel Hair Pasta Noodles

4 servings Trader Joe's Soy Chorizo or sub 2 vegan sausages of choice

⅓ cup cashews

½ cup hot water

¼ cup nutritional yeast

1 tbsp lemon juice

1 tsp dijon mustard

¼ tsp salt 



Drain and rinse the Palmini noodles, set aside.

Add the cashews and hot water to a bowl to soak, 10 minutes.

Chop the sausages well and set aside.

Add the soaked cashews & water to a blender.

Add to the blender: nutritional yeast, lemon juice, dijon mustard, and salt.

Blend until you have a smooth sauce texture.

If needed add 2-3 tbsp more water for a thinner consistency. Set sauce aside.

Bring a pan to medium heat and add diced sausages.

Sautee until cooked through, 4-5 minutes.

Add in palmini noodles and mix through the sausages.

Pour the sauce in and mix everything together really well.

Warm until everything is cooked through.

Plate and top with black pepper and fresh parsley.
