Sweet & Spicy Chickpea Lettuce Wraps

I used to own a meal prep company and this sweet and spicy sauce was by far the most popular thing on our menu. It was served over a protein with a double side of steamed veggies and sold out every single day! 

While I no longer ship meals to customers I do get to send YOU the same, healthy, high protein recipes that I love to create so you can own your meal prep at home.

  

Recipe makes 4 servings

Macros per serving:

454 cals - 18g fat - 53g carbs - 20g protein 

 

Ingredients:

3 cups canned chickpeas, drained and rinsed

1 cup roasted, unsalted cashews

1 tbsp sesame oil, this adds a nice toasty, asian flavour but you can substitute for another oil if needed

3 cloves garlic, minced

2 inches fresh ginger, peeled and diced 

1/4 cup coconut sugar 

1/2 cup liquid aminos (or preferred soy sauce)

1/3 cup rice vinegar

2 tbsp sriracha style hot sauce

lettuce for serving

 

Recipe:

Finely dice the garlic and ginger. Set aside.

Preheat a pan to medium heat and add sesame oil, coating the bottom of the pan.

Add in diced garlic and ginger and sautee for 1-2 minutes. Just long enough to release the flavours but not long enough to brown them.

Add in coconut sugar and mix through, 1 minute.

Add in liquid aminos, rice vinegar, and sriracha. 

Stir everything together and allow to cook on medium heat until sauce has reduced by half, 4-5 minutes. 

Add in chickpeas and cashews and continue cooking until all the sauce has been absorbed and chickpeas are nice and sticky with sauce! Roughly 3-4 minutes.

Remove from heat and serve in lettuce cups or over rice if preferred.
