20 Minute Pantry Noodles

| 20 MINUTE PANTRY NOODLES |

Easy, 20 minute noodles you can whip up with just pantry and freezer ingredients! The ingredients used in these noodles are always stocked in my house for simple meals like this. From the freezer I always have a few bags of frozen vegetable mixes. This makes it so easy to hit my fibre intake between grocery shopping, or just when I don't feel like washing and chopping veggies. And don't worry, freezer vegetables pack just as much (sometimes even more) nutrition as fresh produce!

Recipe makes 3 servings

Macros per serving:

445 cals - 9g fat - 66g carbs - 25g protein 

 

Ingredients:

1 package (227g) chickapea spaghetti noodles or preferred legume noodle

2 cups frozen vegetables, I like these ones from Pura Vida

1/4 cup liquid aminos or soy sauce

2 tbsp lemon or lime juice, could also sub rice vinegar

1 tbsp maple syrup 

1 tbsp extra virgin olive oil or sub sesame oil for a more asian flavour!

1/2 tsp garlic powder, can sub minced fresh

1/2 tsp ginger powder, can sub minced fresh

1 tbsp chili flakes, optional for heat

Optional sesame seeds for garnish

 

Recipe:

1. Bring 6 cups water to a boil and add spaghetti noodles. Cook according to package instructions, mine took 10 minutes. 

2. While the pasta cooks make the sauce by adding to a small bowl: liquid aminos, lime juice, maple syrup, oil, garlic powder, ginger powder, and chili flakes. Whisk to combine. Set aside.

3. Add the frozen vegetables to a pan and cook on medium heat, 4-5 minutes or until cooked through. 

4. Drain and pasta noodles, but keep 1/3 cup boiling liquids.

5. Add the drained noodles, 1/3 cup boiling liquids, and sauce to the veggie pan.

6. Turn heat up to medium high and stir fry everything together, 2-3 minutes.

7. Cooking is done once the noodles and veggies have soaked up all the sauce.

8. Plate into 3 bowls or containers.

9. Enjoy one now, and have the other two for easy prepped lunches tomorrow and the next day!
