| BLACKENED CHICK'UN CAESAR SALAD |
The lighter, gluten free version of yesterday's wrap! I love a good wrap, but sometimes a light and fresh, crunchy lettuce salad is exactly what I'm looking for and this high protein salad always hits the spot.

Ingredients:
1 serving blackened chic'un tenders, see recipe here.
3 cups salad greens
Caesar dressing:
Dressing, 4 servings:
1/3 cup tahini
2 tbsp lemon juice
2 tbsp apple cider vinegar
2 tbsp dijon mustard
1 tbsp nutritional yeast
4 cloves garlic
1 tbsp capers, with the brine
2 tsp black pepper
1/2 tsp salt
1/2 cup water
Recipe:
Prepare the blackened chick'un tenders by following the recipe here.
Dressing: add all the ingredients to a high speed blender and blend until smooth.
Add your salad greens to a bowl and top with 1/4 of the dressing. Toss well to combine.
Top with blackened chick'un tenders.
Optional nutritional add-on: hemp hearts.
