Blackened Chick'un Caesar Wrap

The perfect on the go lunch for weekdays. This high protein wrap will keep you full for hours and help you avoid that afternoon slump. The sauce and chick'un are gluten free recipes so if you need to be gluten free just use your favourite gluten free bread and you're covered! 

 

Recipe makes 1 serving 

Macros per wrap:

691 cals - 27g fat - 69g carbs - 43g protein 

 

Recipe notes:

With almost 700 calories for the wrap, this may be higher than preferred for some of you. No stress, just reduce the amount of chick'un by half and you'll be at 497 calories and 27g plant-based protein!

Want to meal prep this? The dressing is already four servings so all you have to do is double the blackened chick'un recipe and grab 4 whole wheat pitas!

Want it soy free? Make the tofu chick'un with an altnerative tofu or tempeh! These days it's possible to find tofu made from chickpeas, fava beans, and even peas! Just keep in mind the macros will vary.

 

Ingredients:

1 serving blackened chick'un recipe here.

1 whole wheat pita

 

Dressing, 4 servings:

1/3 cup tahini 

2 tbsp lemon juice 

2 tbsp apple cider vinegar

2 tbsp dijon mustard 

1 tbsp nutritional yeast

4 cloves garlic

1 tbsp capers, with the brine

2 tsp black pepper

1/2 tsp salt

1/2 cup water 

 

Recipe:

Follow the instructions for the blackened chick'un recipe here.

Make the dressing by adding everything to a high speed blender and blend until smooth. Dressing will thicken as it sits.

Add your greens to a bowl and mix with 1/4 of the dressing.

Layer the sauced greens into the pita wrap and top with blackened chick'un.

Enjoy!
