| CHOPPED CAESAR SALAD |
I think this is in my top 3 salads I've ever made. It's creamy, it's crunchy, it's super satisfying with tons of protein, and it has one of the most important elements needed for a really good salad: it's chopped well enough that you can get everything in one bite.
The recipe makes 6 servings, or less if you enjoy bigger portions! It might be too many servings for some of you, I am always feeding two, so it doesn't take long for us to get through meal prep. But you can easily halve the recipe is you need to get just three servings if that suits your week best.

348 cals - 24g fat - 9g carbs - 24g protein
Ingredients
700g extra firm tofu
1 tbsp extra virgin olive oil
2 tsp garlic powder
1 tsp salt
1 tsp black pepper
2 cups finely chopped kale
1 cup micro greens, I used a broccoli sprout micro green
1/2 red onion, diced
1/2 cup sliced almonds
Dressing
1/3 cup tahini
2 tbsp lemon juice
2 tbsp apple cider vinegar
2 tbsp dijon mustard
3-4 cloves garlic
1 tbsp nutritional yeast
1 tbsp capers, with the juice
2 tsp black pepper
1/2 tsp salt
1/3-1/2 cup water
Recipe
Preheat the oven to 375 F and line a large baking tray with parchment paper.
Rough chop the tofu into mismatched chunks, and add them to a large mixing bowl.
Season chopped tofu with olive oil, garlic powder, salt, and pepper. Toss well to season.
Spread seasoned tofu across the prepared baking tray and bake for 18-24 minutes, or until golden.
Allow tofu to cool.
Prepare the vegetables: kale, red onion, and sprouts. Chop the almonds if needed.
Make the dressing by adding all the dressing ingredients to a high speed blender, blending until super smooth. Add as much or as little water as needed to reach desired consistency. Keep in mind, tahini dressings thicken over time.
Add all the prepared ingredients into one large mixing bowl: baked tofu, kale, onion, sprouts, almonds, and dressing. Toss really well to combine.
Enjoy salads as is, or scoop into wraps or sandwiches.
Chopped Caesar Salad should last in an airtight container in the fridge for up to 4 days.
