Ingredients:
4 cups cucumber, choppedÂ
2 cup chickpeasÂ
½ cup pumpkin seedsÂ
1 large avocadoÂ
Dressing:
ÂĽ cup tahiniÂ
1 cup fresh cilantro, rough chopped, stems included!
2 cloves garlicÂ
1 tbsp lemon juiceÂ
1 tbsp apple cider vinegarÂ
1 tbsp date syrupÂ
ÂĽ cup waterÂ
1 tsp saltÂ
Recipe:
Prepare your salad ingredients and add them to a bowl, set aside.
Add all your dressing ingredients to a high speed blender and blend until smooth.
Pour dressing over salad and toss everything well to mix.
Enjoy right away or seal in an airtight container until ready to eat.
