Green Goddess Chopped Salad


Nutritious, delicious, and simple to make! Pair it with a high quality protein like tofu, tempeh, or seitan for a well balanced meal.

Recipe makes 4 servings 

Macros per serving:

432 cals - 26g fat - 34g carbs - 16g protein 


4 cups cucumber, chopped 

2 cup chickpeas 

½ cup pumpkin seeds 

1 large avocado 


¼ cup tahini 

1 cup fresh cilantro, rough chopped, stems included!

2 cloves garlic 

1 tbsp lemon juice 

1 tbsp apple cider vinegar 

1 tbsp date syrup 

¼ cup water 

1 tsp salt 


Prepare your salad ingredients and add them to a bowl, set aside.

Add all your dressing ingredients to a high speed blender and blend until smooth.

Pour dressing over salad and toss everything well to mix.

Enjoy right away or seal in an airtight container until ready to eat.
