| FAVA BEAN SNACK BARS |
I fell in love with the Sweet and Salty Peanut Snack Bars from last week so I had to make a new version! This option is nut free, lower in fat and has a touch more protein. They’re super crunchy and with a little added sea salt they’re the perfect sweet and salty snack you crave!
Recipe makes 6 snacking bars
Macros per bar:
200 cals - 4g fat - 33g carbs - 8g protein
Recipe notes:
I used Three Farmers Sea Salt Fava Beans for a pre-roasted, high protein addition. They also have roasted chickpeas that would be a great substitute! If you do sub chickpeas keep in mind the macros will vary.
When I posted the Salty Peanut Bars a few of you asked me if maple syrup would work in place of the brown rice syrup. I still haven't tested it, but I imagine it would. The goal is to bake the bars low and long so the sugar hardens so they're bars not granola. When I get some maple syrup I will update you!
The brown rice syrup I used is Lundberg Farms Organic Brown Rice Syrup.
Cereal is the Nature's Path Crispy Rice Cereal.
Ingredients:
1 cup roasted fava beans
¼ cup hemp hearts
1 cup rice cereal
¼ cup + 2 tbsp brown rice syrup
Recipe:
Preheat the oven to 250 F.
Prepare a loaf pan with parchment paper, set aside.
Add everything to a bowl.
Oil your hand or a spatula and mix everything together really well. Make sure the brown rice syrup is mixed thoroughly.
Pour the mixture into the prepared loaf pan and press down to create a dense bar.
Top with flaky sea salt if desired. (Recommended for that sweet and salty flavour!).
Bake for 20-25 minutes or until firm to the touch.
Allow to cool completely before slicing into 6 bars.
