Lemon Tahini Energy Balls

| LEMON TAHINI ENERGY BALLS |

We're in the final stretch of the year and life's about to get busy! Which makes it the perfect time to whip up a healthy batch of good-for-you energy boosting lemon balls! Packed with real lemon juice and zest, fiber rich oats, and Botanica Health's Perfect Vanilla Protein. 

I rolled these in organic icing sugar for a fun donut hole vibe but if you'd like to keep these totally refined sugar free you can skip the sugar roll and consider rolling them in shredded coconut or sesame seeds!

 

Recipe makes 8 energy balls (you can double it for a bigger batch!)

Macros per ball:

150 cals - 6g fat - 18g carbs - 6g protein 

 

Ingredients:

1/2 cup + 2 tbsp oat flour 

1/4 cup + 1 tbsp tahini 

1 scoops Botanica Health Vanilla Protein

2 tbsp maple syrup 

2 tbsp lemon juice

1 heaping tbsp lemon zest (zest from one lemon)

pinch of salt 

 

Roll in:

2 tbsp icing sugar 

 

Recipe:

If you don't have oat flour simply add 1/2 cup + 2 tbsp oats to a blender and blend until you have a fine flour.

Add the oat flour to a bowl with tahini, Botanica Health Perfect Vanilla Protein, maple syrup, lemon juice, lemon zest, and a pinch of salt.

Fold everything together forming a dough.

Roll into 8 energy balls.

Add the icing sugar to a small bowl and drop each lemon ball into it, coating all the sides.

Place in a container and seal until ready to eat!

I like to keep mine in the fridge for best texture.
