Peanut Butter Crunch Protein Bars

Crispy, crunchy, peanut butter chocolate GOODNESS! I made these bad boys just as my luteal phase was coming to a close for the month and knew the week ahead meant I needed chocolate after every meal, maybe even *for* some meals ;)

These protein bars are low in carbs and pack a decent amount of protein to calories. They also have a nice dose of healthy fats from almond flour and real cacao chocolate to keep me feeling *actually* satisfied after indulging my sweet tooth.

 

Recipe makes 10 bars

Macros per bar:

203 cals - 11g fat - 13g carbs - 13g protein

 

Ingredients:

2/3 cup peanut butter powder + 3/4 cup water

1/2 cup almond flour

1/2 cup Nuzest Smooth Vanilla Protein, discount/affiliate code: "EVANNRYAN"

2 Zazubean Coconut Almond Chocolate Bars  or 170g chocolate of choice

1 tbsp regular peanut butter 

1 1/2 cup rice crispy cereal

 

Recipe:

To a mixing bowl add: peanut butter powder and water. Whisk until combined.

Add in vanilla protein and almond flour. Mix forming a dough. You may have to get in there with your hands.

Press the dough into a small 8x8 inch baking tray, set aside.

Add chocolate to a sauce pan and melt on low, stirring constantly so it doesn't burn.

Once melted remove from heat and stir in peanut butter. 

Once peanut butter is melted through the chocolate, add the rice crispy cereal.

Fold the cereal through the chocolate coating every piece.

Pour chocolate mix over the protein bar base and spread evenly from edge to edge.

Top with sea salt and set in the fridge to firm.

Once firmed, slice into 10 bars.

Bars are best kept in the fridge until ready to eat.
