Sweet & Salty Snack Bars

Think Kind bars but vegan and with cleaner ingredients! With only one natural sweetener, organic brown rice syrup and the ability to pack in additional nutrition from hemp and flax! These are sweet, salty, and quite literally the perfect pick me up. 

 

Recipe notes:

I used the Lundberg Farms brown rice syrup which has an incredible texture and sweetness while also being non-gmo, organic, and low in fructose.

For the rice cereal I like the brand Natures Path for their organic cereals. The rice cereal I used is brown rice which is great but it does have a bit of sugar in it. However keep in mind the 1 cup measurement used for 6 bars is only 2g sugar. This equals out to 0.3g sugar per serving. (Before the brown rice syrup).

Recipe makes 6 bars

Macros per bar:

226 cals - 10g fat - 27g carbs - 7g protein

 

Ingredients:

½ cup peanuts

ÂĽ cup hemp hearts

¼ cup flax meal 

1 cup organic rice cereal

ÂĽ cup + 2 tbsp brown rice syrup

ÂĽ tsp maldon salt

1 tsp vanilla bean powder

 

Recipe:

Preheat the oven to 275 F and line a 9x5 inch with parchment paper, set aside.

Add everything to a bowl and mix well. To make mixing easier, oil a spoon/spatula or your hands!

Mix until the brown rice syrup is mixed through everything.

Pour into the prepared pan.

Press the bars down into the pan forming a smooth top and a dense bar.

Bake for 20-25 minutes or until browned.

Check the bars at 15 minutes to ensure they’re not browning too quickly, then rotate the pan.

Cook for another 5-10 minutes.

Bars should be firm to the touch. 

Allow to cool completely before slicing into 6 bars.
