Small Batch Apple Cinnamon Protein Cookies

The perfect small batch protein cookie! Filled with cinnamon and maple caramelized apples, sprouted oats and vanilla protein powder. Easy, nutritious and great for meal prep or a quick snack.

 

Recipe makes 4 cookies 

Macros per cookie:

248 cals - 4g fat - 38g carbs - 15g protein 

 

Ingredients:

1 apple, chopped into small pieces

1 tbsp cinnamon

2 tbsp maple syrup 

50g Vanilla Protein (use code: EVANNRYAN to save $$$) 

1 cup sprouted oats, blended into a flour 

1/3 cup plain coconut yogurt

2-4 tbsp almond milk or preferred dairy free milk 

1/2 tsp baking soda

1/8 tsp salt

 

Recipe:

Preheat the oven to 350 F and line a baking tray with parchment paper, set aside.

Finely chop the apple and add to a non-stick pan with cinnamon, maple syrup, and a pinch of salt.

Cook on medium low heat until apples are caramelized, 6-8 minutes.

Remove from heat and pour onto a plate to cool quickly.

To a mixing bowl add: vanilla protein powder, oat flour, coconut yogurt, 2 tbsp almond milk, baking soda, and salt. Mix together forming a dough.

If the dough is too dry add 1-2 tbsp more almond milk. If it's too wet set the cookie dough in the fridge for 10-15 minutes to firm.

Fold the cooled cinnamon apple pieces into the cookie dough.

Form 4 large, sticky cookies, and add them to the prepared baking tray.

You don't need to press the cookies flat, leave them as big mounds.

Bake for 14-18 minutes or until cooked all the way through and browned on the bottoms.

Drizzle with a little maple syrup if desired.
