Chocolate Ganache Protein Cookie

On the go breakfast or high protein snack for all my chocolate lovers!! This cookie is super easy to make and can easily be doubled or tripled for meal prep! But keep in mind if you do double or triple the recipe don't immediately double or triple the milk, start with half and add in 1 tbsp at a time until desired cookie dough texture.

Recipe makes one serving

Macros per serving:

370 cals - 10g fat - 42g carbs - 28g protein

 

Ingredients:

2 tbsp cocoa powder

2 tbsp oat flour (blend 2 tbsp oats to a flour!)

1/4 cup chocolate protein powder (25g)

2 tbsp plain vegan yogurt

1/4 cup almond milk

1/2 tbsp maple syrup

1/4 tsp baking soda

pinch salt 

 

Topping:

1 tbsp chocolate chips

1 tbsp almond milk

 

Recipe:

Preheat the oven to 350 F and line a small baking tray with parchment paper.

To a small mixing bowl add: cocoa powder, oat flour, chocolate protein, yogurt, almond milk, maple syrup, baking soda, and salt.

Mix everything together well, forming a dough.

If the dough is a little wet you can set it in the fridge to firm, 20-30 minutes. If it's still too wet add just a touch more cocoa powder.

Roll into one large cookie ball and press it onto the prepared baking tray, forming a thick, flattened cookie.

Bake for 10-12 minutes or until lightly cracking on top.

Allow to cool.

 

Ganache top: 

Add the chocolate chips and 1 tbsp milk to a small bowl and melt together over the stove or in the microwave. Making sure to stir every 10 seconds so it doesn't burn.

Pour the ganache over the cookie and spread it with a spoon from edge to edge.

Place cookie in the fridge to firm the ganache, 10-20 minutes.
