Dunkaroo Protein Pudding

If you didn't grow up in North America, chances are you don't know what dunkaroos are so let me guide you.. 

Dunkaroos were a snack pack sold to kids that had one side sweet biscuits, think animal graham crackers, and the other side was a thick white icing with sprinkles. They were terrible for us and lacking any and all nutrition, but man were they delicious. Or at least from what I can remember from the single dunkaroo my mom ever let me eat.

Now that I'm an adult I get to make my own food decisions which, as a kid, I thought would mean me eating as many dunkroos as my heart desires at whatever time of day. But turns out, I grew into the kind of adult who gets why their mom wouldn't let them have them.. so.. adult, protein packed, dunkaroos it is. Because your girl still loves anything with sprinkles.

 

Recipe makes 2 servings (or three for a smaller, snack size)

Macros per serving:

375 cals - 15g fat - 30g carbs - 30g protein 

 

Ingredients:

1 1/2 cups plain vegan yogurt, I like coconut yogurt!

2 scoops Vedge Nutrition Vanilla Ice Cream Protein Powder 

1 tsp vanilla extract 

1/8 tsp sea salt 

2 tbsp vegan sprinkles 

4 Made Good Vanilla Cookies

 

Recipe:

To a mixing bowl add: vanilla greek yogurt, vanilla protein powder, vanilla extract, and salt. Whip everything together until really smooth.

Fold in sprinkles.

Divide the batter across two bowls or meal prep containers. 

Break the vanilla cookies in half and add to the tops of each bowl.

Seal and refrigerate until ready to eat.
