Grain Free Vegan Breakfast Pizza

Recipe makes one small pizza

Macros per pizza:

486 cals - 22g fat - 40g carbs - 32g protein 

 

Ingredients, crust:

1/2 cup chickpea flour

1 tbsp Italian seasoning - or a combination of dried oregano, basil, garlic, paprika

1 tbsp extra virgin olive oil 

1/4 tsp salt

1/2 cup water

 

Toppings:

1 tbsp ketchup 

1/4 of a batch of my 5 Minute Tofu Scramble + spinach 

15g vegan cheddar cheese grated, I really like the New Daiya Cheddar Block

1-2 spring onions, diced 

1-2 tsp chili flakes if desired 

 

Recipe:

Prepare the 5 Minute Tofu Scramble first then set aside.

Crust:

Add all the crust ingredients to a small bowl and whisk together.

Set aside to thicken for 15 minutes.

Warm a non stick pan to medium heat and pour the thickened chickpea flour mixture into the hot pan and use a spoon to form a nice, thin circle. 

Cook on the first side for 5-7 minutes or until almost cooked all the way through.

Flip and add toppings:

Add 1 tbsp ketchup and smooth from edge to edge.

Top with cooked tofu scramble.

Spread grated cheddar cheese across the pizza.

Place a lid over the pan and reduce heat to medium low. Allow to cook another 3-4 minutes or until cheese is melted. 

Gently remove pizza from the pan and allow to cool slightly. The longer it cools the firmer the crust. (It's actually great cold for meal prep as well!)

Top with chopped spring onions, and chili flakes if desired. 

Slice into 4 pieces and enjoy!
