Protein Cherry Delight

I have been absolutely obsesssssssed with protein yogurt for the past 3-4 months. As someone who doesn't love to get their protein in from a protein shake but does love utilizing the convenience of protein powder this has been one of favourite go-to meals to seamlessly hit my protein goals each day. 

The flavours of protein yogurt I enjoy each day can be as basic as vanilla protein with coconut yogurt and some apple slices or more extravagant but still very easy protein bowls like this Cherry Delight recipe! This epic version has three layers making it just that little bit extra special while still considering balanced macros.

Recipe makes two servings

Macros per serving:

402 cals - 18g fat - 35g carbs - 25g protein

 

Ingredients:

1 1/2 cups coconut yogurt, I use Maison Riviera Plain Coconut

50g Nuzest Vanilla Protein, discount code: "EVANNRYAN" (affiliate code)

20 frozen cherries 

1 tsp chia seeds

8 vegan graham crackers, I used Mary's Gone Crackers 

2 tsp butter, melted

 

Recipe:

Crush the graham crackers into a fine crumb and mix in melted butter.

Press the mixture into the bottom of two meal prep containers and set aside.

In a small mixing bowl add yogurt and vanilla protein. Whisk until super smooth.

Pour over the graham cracker crusts, set aside.

Add frozen cherries to a pot and bring to a low simmer. Cook until you can easily smash each one with a fork. Remove from heat and mix in 1 tsp chia seeds.

Allow cherries to cool into a jam, 10 minutes, before dividing jam across each yogurt bowl.

Set in the fridge to cool completely, 1 hr or overnight!
