| VANILLA CRISP PUDDING |
Just three ingredients to make this velvety, crispy, smooth, sugar free pudding! Perfect for a healthy breakfast, snack or dessert. Skip the boring oatmeal and try this instead.

390 cals - 10g fat - 42g carbs - 33g protein
Ingredients
2 rice cakes (this brand makes THE best rice cakes!!!)
40g of vanilla protein (15% off affiliate link)
3/4 cup almond milk
1 tbsp vegan chocolate chips (15% off affiliate link)
2 tbsp almond milk
Recipe
Crumble the rice cakes into a mixing bowl.
Add in protein powder and 1/2 the milk. Mix well. Add in more milk as needed to get a smooth and creamy texture. I used all 3/4 cup of almond milk.
Pour the mixture into a small meal prep container. Set aside.
Add the chocolate chips and almond milk to a sauce pot and bring to low heat, stirring constantly. Whisk until melted, then immediately remove from the heat.
Alternatively melt the chocolate and almond milk in the microwave, 10 seconds at a time.
Pour the chocolate ganache over the pudding and spread from edge to edge.
Top with sea salt if desired.
Set in the fridge for a minimum of 2 hours. I set them overnight!
