Banana Cobbler

Banana cobbler meets bananas foster with this warm, and gooey, protein rich dessert! This recipe is from my new ebook, "Top 100 High Protein Vegan Recipes" which you can pre-order right now to save! 

Baked banana tossed in coconut sugar, vanilla protein, and cinnamon topped with a cobbler style batter! I topped mine with this vegan salted caramel ice cream for the ultimate treat.

 

Recipe makes 1-2 servings

Macros for the whole thing:

453 cals - 21g fat - 47g carbs - 19g protein 

 

Ingredients, base:

1 banana, sliced into rounds

1 tsp coconut sugar 

1 tsp cinnamon (affiliate/discount link)

1 tbsp vanilla protein powder (affiliate/discount link)

 

Topping:

1 tbsp cold vegan butter

2 tbsp gf all purpose flour or regular all purpose

1 tsp coconut sugar 

2 tbsp vanilla protein powder (affiliate/discount link)

¼ cup almond milk, water works here too!

 

Recipe:

Preheat the oven to 350 F and grease a small oven safe dish with vegan butter, set aside.

Slice banana and add to a small bowl.

Add in 1 tsp coconut sugar, 1 tsp cinnamon, 1 tbsp protein, and a pinch of salt.

Toss together well coating the banana. Add everything to the prepared baking dish. Set aside.

To a small bowl add: cold vegan butter, flour, and 1 tsp coconut sugar, mix well forming a chunky mixture with your hands. It should resemble wet sand.

In a separate bowl or ramekin add 2 tbsp vanilla protein and ¼ cup almond milk or water and mix well until a thick mixture forms.

Pour protein mix into butter mix and blend everything together.

Pour batter over banana mixture, spreading evenly across the top with a spoon.

Bake for 20-25 minutes or until the top batter is browned from edge to edge.

Remove from the oven and allow to cool slightly.

Enjoy as is or with a scoop of ice cream!
