Berry Protein Cobbler

It's cobbler and crisp season so why not find a way to pack it with protein and even better for you ingredients so it's not just a dessert but a nutritional breakfast option you can easily meal prep! This cobbler has 28g of protein, is gluten free, high in antioxidants from both cinnamon and mixed berries and feels light while keeping you full and satisfied.

 

Recipe notes:

Use whatever fruit you prefer! I loved this mixed berry combo with cherries but peaches or another seasonal fruit would also be amazing.

Not quite as nutritionally balanced but I added a scoop of coconut whip to the top for an extra fancy and indulgent way to eat it. Definitely worth a try!

 

Recipe make 4 servings

Macros per serving:

450 cals - 26g fat - 26g carbs - 28g protein

 

Ingredients, base:

4 cups frozen mixed berries 

1 tbsp lemon juice

1 tbsp coconut sugar

1 tbsp cinnamon 

Top:

1/4 cup vegan butter, melted

1/2 cup oat flour (you can blend your oats through the blender for this!)

1 1/2 cups soy milk

Recipe:

Preheat the oven to 350 F. 

To a mixing bowl add: berries, lemon juice, coconut sugar, 2 scoops vanilla protein, cinnamon, and a pinch of salt.

Stir all of it together coating the berries.

Pour the berry mix into a baking tray, set aside.

To a mixing bowl add: melted butter, oat flour, soy milk, and 6 scoops vanilla protein.

Mix forming a thick paste.

Spoon the paste onto the berries and spread as evenly as possible from end to end.

Bake the cobbler for 30-35 minutes or until browned and crispy on top.

Allow to cool slightly before slicing into 4 large squares.

Serve and enjoy right away or pack into four individual meal prep containers.
