Double Chocolate Protein Brownies

| DOUBLE CHOCOLATE PROTEIN BROWNIES |

These low calorie, double chocolate brownies are insane! So easy to make with no refined sugar and 7g protein per 125 calorie slice! They're chocolate heaven for the protein focused girly that needs her sweet treats.

 

Recipe makes 15 two bite brownies

Macros per brownie:

125 cals - 5g fat - 14g carbs - 7g protein 

 

Ingredients:

1/2 cup yam puree 

2/3 cup soy milk or preferred dairy free milk

1/4 cup plain coconut yogurt

1/2 cup coconut sugar 

1/4 cup all purpose flour or GF all purpose

1 tsp baking powder

1/8 tsp or large pinch salt

 

Chocolate Top:

 

120g Zazubean Saltry Bars (1 1/2 bars)

1 tbsp extra virgin olive oil

 

Optional: sprinkles!

 

Recipe:

Preheat the oven to 350F and line a baking tray with parchment paper.

**I  made my own yam puree by boiling 1 small, peeled and chopped yam for 12-15 minutes or until a fork slides through easily. Drain, and puree in a blender till smooth. Alternatively buy yam puree in a can.**

To a mixing bowl add: yam puree, soy milk, coconut yogurt, and coconut sugar.

Whisk until combined.

Sift in the dry ingredients: flour, chocolate protein powder, cocoa powder, baking soda, and salt.

Fold until just combined.

Add the batter to the prepared baking tray and use a spoon to smooth the batter from edge to edge. 

NOTE: The batter will be a lot thicker than your typical brownie batter, almost as sticky as a cookie dough. But once it bakes it's truly like a brownie!! 

Bake for 16 minutes. The top should be lightly cracking and the center should feel firm.

Allow the brownies to cool slightly before removing from the pan.

Add Zazubean Saltry Chocolate Saltry Bar and olive oil to a saucepan and bring to low heat. Mix until it's nice and smooth.

Pour chocolate over the brownies and top with spinkles.

Allow to chocolate to firm before slicing into 15 two bite brownies.
