Halloween Dirt Cups with Protein

If you're not from North America there is a good chance you're wondering what the heck is dirt cake?! Which is a fair question, because the name doesn't exactly ring *delicious*. But LET ME TELL YOU it is not only incredibly delicious but something I grew up eating for holidays and totally looked forward to all year. 

The original dirt cake recipe is made up of cream cheese, oreos, whipped topping (think cool whip), and icing sugar. It's then topped with gummy worms to make it resemble dirt with worms. As I'm sure you guessed, it's usually a cake made for children. 

Today though, we're making one of my childhood favourite not only for adults, but wayyyy healthier and high enough in protein to replace a full meal. It's a great option for halloween because you can get fun with all the festive holiday toppings like I did with candy eyeballs. 

 

Recipe notes:

I used a "healthier" cookie option for the dirt topping that is gluten free, refined sugar free, and free of allergens. But the original recipes calls for oreos which happen to be magically vegan! So if you want to use oreos, go for it!

 

Recipe makes two servings

Macros per serving:

421 cals - 17g fat - 36g carbs - 31g protein 

 

Ingredients:

2 servings chocolate protein powder (50g)

2 cups plain coconut yogurt

1/4 cup cocoa powder

1 tbsp maple syrup 

1 1/2 tbsp lemon juice

1/8 tsp salt 

4 chocolate cookies/biscuits (30g) 

10-20 candy eyeballs (optional for halloween!)

 

Recipe:

To a mixing bowl add: chocolate protein, coconut yogurt, cocoa powder, maple syrup, lemon juice, and salt. Whip together until smooth.

Divide the chocolate pudding across two containers and set aside.

Add the cookies to a blender and pulse into a crumb.

Spread the cookie crumb across the puddings.

Top with candy eyeballs or gummy worms if desired!
