PB Banana Protein Bark

Finally jumping on the banana bark trend! I absolutely lovvvvved the date bark so I knew the banana bark would be a hit, but using Zazubean's high quality, ultra dark, Buff Bar as the chocolate top really took it to the next level.

This treat is jam packed with nutrition on every layer. Banana's are packed with fiber and potassium, I mixed peanut butter powder & soy milk to create a lower in fat and calories center with a nice protein boost and the 90% cacao Buff Bar mixed with sea salt and just a hint of coconut sugar sweetener for a smooth chocolatey top!

Recipe makes 12 bars

Macros per recipe:

 142 cals - 8g fat - 14g carbs - 5g protein

 

Ingredients:

3 banana

1/2 cup + 2 tbsp peanut butter powder

1/2 cup soy milk

1 1/2 Zazubean Buff Bars (90% cacao!)

1/4 cup peanuts, chopped

1/2 tsp ses salt flakes

 

Recipe:

Lay a piece of parchment paper across a sheet pan that fits into the freezer.

Slice your bananas into medallions and lay across the parchment paper forming a rectangle. 

In a small mixing bowl add: peanut butter powder, and soy milk. Whisk well to combine, forming a spreadable peanut butter.

Pour the peanut butter across the bananas. Using a spoon smooth the peanut butter from edge to edge, covering the bananas.

Add the Zazubean Buff Bar to a bowl and gently melt over a double broiler or in the microwave.

Pour the melted chocolate over the peanut butter layer and smooth from edge to edge.

Top with chopped peanuts and sea salt.

Place in the freezer to firm, 2-3hrs or overnight.

Slice into bars.

Place in a freezer safe container and keep in the freezer until ready to eat.
