Stuffed Dates with Peanut Butter & Chocolate
These healthy, and protein rich, chocolate and peanut butter stuffed dates have just 119 calories per serving and 5g of protein. They're low in fat, thanks to using peanut butter powder, and packed with health benefits from the juicy dates like better digestion, heart health, and increased energy.Â

What you'll need:
Medjool Dates. You want them to be fresh and juicy so they easily slice in half, and still have that soft caramel texture.
Peanut butter powder. I used peanut butter powder to reduce the calories, while increasing the protein. Alternatively, you could use regular peanut butter here too.
Chocolate chips, or some variety of chocolate. I like using Enjoy Life vegan and dairy free chocolate chips, but use what you have or prefer.
Catalina Crunch cereal, as it's high in protein and lower in carbs keeping the macros tighter. You can definitely use your preferred crunchy cereal here.

They're incredibly tasty, and versatile! Use almond butter, sunflower butter, tahini, pistachio butter, cashew butter, whatever you have on hand to stuff them with. Drizzle with white chocolate or chopped crunchy seeds for a different flavour or texture.

Stuffed Dates with Peanut Butter & ChocolateÂ
Recipe makes 8 stuffed dates
Macros per stuffed date:

Ingredients:
8 large medjool dates
1/2 cup peanut butter powder
1/3 cup chocolate chips
1/3 cup crunchy cerealÂ

Instructions:
1. Place a piece of parchment paper on plate.Â
2. Using a small knife, gently slice the dates open half way, removing the seeds.
3. Lay all 8 dates flat on the parchment lined plate.
4. In a small bowl add peanut butter powder and 1/2 cup water. Mix well forming a thick peanut butter.
5. Spoon the peanut butter into the 8 open dates, dividing the peanut butter evenly.
6. In a small microwave safe bowl, or in a small pot on the stove, melt the chocolate chips gently on a low temperature. Stir often so the chocolate doesn't burn.
7. Smash or chop the cereal into small pieces and add them to the melted chocolate. Mixing through so all the cereal pieces are completely covered in chocolate.
8. Using two spoons, gently divide the chocolate cereal mixture across the tops of all the peanut butter dates. Use one spoon to get the chocolate and the other to slide it off onto the peanut butter date.
9. If desired top each with a small sprinkle of coarse sea salt.
10. Place the dates into the fridge to firm up the chocoalte, 10-20 minutes.
11. Once firm, add the stuffed dates to a sealable container and keep in the fridge until ready to eat.
Fresh Tip: If you want to keep them for a long time you can add them to a freezer safe container and store them in the freezer. Remove from the freezer 20 minutes before you're ready to eat/serve.
