Creamy White Bean Pasta
Creamy, dreamy, dairy free pasta sauce made from white beans. This sauce is loaded with flavour and adds so much added fibre to keep you full for hours! Nutritional yeast adds B vitamins, lemon juice increases the iron absorption from the legume pasta, and fresh garlic adds a big immunity boost! This is the way to pasta.
Creamy Bean PastaÂ
Recipe makes 3 servings

Ingredients:
1 cup cannellini beans (white beans)
1/4 cup nutritional yeast
2 tbsp hemp hearts
2 tbsp lemon juice
2 cloves garlic
1/2 tsp salt
1 cup almond milk or preferred dairy free milk
227g chickapea pasta or preferred legume pasta
1/2 cup flat leaf parsley, chopped, optional*
Recipe:
Bring 8 cups water a boil and salt the water.
Once water is boiling add the pasta and cook al dente. This will depend on your pasta but roughly 6-8 minutes.
While the pasta is cooking make the sauce:
To a high speed blender add: beans, nutritional yeast, hemp hearts, lemon juice, garlic, salt, and almond milk. Blend until smooth. Set aside.
Drain pasta, making sure to reserve 1/3 cup pasta boiling liquids.
Add the pasta, 1/3 cup pasta boiling liquids, and prepared sauce back to the pasta pot.
Turn heat to medium low and allow to cook on a low simmer until sauce is thick and noodles are tender, 3-4 minutes.
Top with fresh chopped parsley and black pepper.
