Dill Ranch Bowl

If you love a quick, 20 minute dinner recipe that you can easily turn into meal prep, then you have to make this easy, one pan dill ranch bowl! Packed with nutrition from loads of pan veggies, and a hemp seeds ranch dressing, this one tastes as good as it makes you feel.

Recipe Notes

Make the meal bigger for minimal calories by doubling the vegetables, or plating each serving over a large bowl of salad greens.

I like using a frozen bag of vegetables to make this meal super easy and fast! But if you prefer fresh, then use whatever fresh veggies you have on hand.

 

Recipe makes 4 servings

Macros per serving:

328 cals - 16g fat - 18g carbs - 28g protein 

 

Ingredients

4 vegan sausages, I used these for 20g per serving

4 cups frozen vegetable mix, I used this one which has oil in it already

1 tbsp olive oil (only use if your frozen vegetable mix doesn't contain oil)

 

Dill Ranch

1/2 cup hemp hearts

1/2 cup almond milk 

1 tbsp lemon juice

1 tbsp red wine vinegar

1 tbsp dried parsley powder

1 tbsp dried chives 

1 tsp dried dill 

1 tsp onion powder

1 tsp garlic powder

1 tsp black pepper

1/2 tsp salt

 

Recipe

Make the dressing first by adding all the "Dill Ranch" ingredients into a high speed blender and blending until smooth. Taste test, and adjust salt if needed.

Set dressing aside.

Slice the sausages into rounds.

Preheat a pan to medium heat and add chopped vegan sausages.

Cook until slightly browned and crispy, around 4 minutes.

Add in frozen vegetables and oil if needed, and place a lid over the pan.

Allow to cook for 2-3 minutes with a lid on the pan, heating the frozen veggies through.

Remove lid, toss everything around the pan well and continue to cook without the lid until vegetables are cooked through.

Remove from heat.

Plate into 4 bowls or containers.

Drizzle each with 1/4 of the Dill Ranch dressing.
