| MARRY ME ONE POT PASTA |
Marry me pasta was all the rage just a few months ago and with good reason, it's creamy, rich, salty, and PASTA! But the original is also laden in dairy and simple carbs, so I needed to make you a macro friendly version you can enjoy at any phase in your health and fitness journey. Plus, it still tastes awesome!!Â
Recipe Note
This recipe was created for my "Low Calorie Recipe Series" and because of that I went light on the coconut milk and chose not to top it with vegan parmesan (like the original pasta has). If you're happy to increase the calories, consider doubling the coconut milk and adding some plant-based parm when serving!Â
Another option would be to increase the calorie and protein by adding chopped vegan sausages like these, or some beefless grounds!

Recipe makes four servings
Macros per serving:
420 cals - 8g fat - 63g carbs - 24g proteinÂ

Ingredients
4 servings legume pasta (340g of this red lentil pasta)
1 tbs vegetable bouillon + 5 cups water (or sub 5 cups veg broth)
1 cup marinara sauce
1/4 cup full fat coconut milk, canned
1/4 cup sun dried tomatoes, in the oil, chopped
3 cloves garlic, chopped
4 cups spinachÂ
1 packet fresh basil, chopped (about 1/3 cup)
1 tbsp chili flakes, optional

Recipe
To a large pot add: pasta, vegetable bouillon and water, marinara, coconut milk, sun dried tomatoes, and garlic. Mix well.
Place a lid over the pot and bring to a boil.
Once boiling remove the lid and reduce heat to a low simmer.
Cook, stirring often so the noodles don't stick to the pan, for 15 minutes.Â
Once noodles are al dente, add in the fresh chopped spinach, basil, and chili flakes. Mix through and turn off heat.
Allow pasta to sit on the warm burner for another 5 minutes or until noodles are soft and you have a nice creamy sauce.
Plate into 4 bowls or meal prep containers.Â
Meal prep tip: For hot meals going into the glass containers I like to place the meal in the fridge without a lid. Once meal has completely cooled, seal with a lid. This allows the food temperature to cool more safely and rapidly. Bonus: you don't get water condensation in your meals!

Pasta will last in the fridge in a sealed container for up to 4 days.
