Sweet Chili Vegan Beef

If you're trying to limit takeout and cook more, then this Chinese inspired Sweet Chili "Beef" might just convert you to cooking at home more often! It's super simple to make, tastes better than takeout, and will leave you feeling your absolute best. 

Great for meal prep, or make it for your family tonight!

Recipe Note:

You can substitute the fava and pea protein chunks with soy curls, or Say Grace Protein nuggets.

Recipe makes 3 servings

Macros per serving:

290 cals - 6g fat - 34g carbs - 25g protein 

 

Ingredients, Protein:

1 bag (108g) fava & pea protein chunks

4 cups boiling water

3 tbsp liquid aminos (soy sauce)

1 inch fresh ginger, peeled and diced

2 cloves garlic, diced

2 tsp coconut sugar

1 tsp black pepper

1 tbsp tapioca flour or sub corn starch or arrowroot flour

 

Sauce:

3 tbsp ketchup 

1 tbsp tomato paste

2 tbsp liquid aminos (soy sauce)

2 tbsp maple syrup or vegan honey 

1 tbsp vinegar (apple cider, white vinegar, or rice vinegar)

2 tbsp chili flakes

 

Other:

1 tbsp avocado oil, or preferred cooking oil

1 red bell pepper, sliced

1/3 yellow or white onion, sliced

 

To Serve:

3 servings rice, noodles, or a low carb option like cauliflower rice or konjac noodles

 

Recipe:

Preheat the oven to 375 F and line a baking tray with parchment paper. Set aside.

Pour the fava and pea chunks into a large bowl and cover in boiling water. Set aside to hydrate, 10 minutes.

Drain the fava/pea chunks and press any excess water out.

Add them back to the bowl and season with "Protein Ingredients": soy sauce, chopped ginger and garlic, coconut sugar, black pepper, and tapioca flour. Toss well to coat.

Spread seasoned protein across the prepare baking tray and bake until browned and crispy, 20-25 minutes. Set aside.

 

Make the sauce by adding all the "Sauce" ingredients to a bowl and whisking to combine. Set aside.

 

Bring a pan to medium heat.

Add oil and coat the bottom.

Add in sliced bell pepper and onion and cook until lightly softened, 3-5 minutes. They should still have a nice crunch to them.

Add in baked fava/pea protein chunks and the prepared sauce.

Toss through well, mixing everything together.

Turn heat to low and cook for 1-2 minutes or until everything is mixed well and saucy.

Plate with preferred side.

Enjoy!

 

Sweet Chili "Beef" will last in the fridge for up to 4 days.
