20 Minute Vegan Apple Pie Dessert

This simple vegan apple pie inspired dessert is made without baking a single thing, and skips the crust completely so you can jump right into the filling and a smooth creamy topping. It's easy, delicious, and packed with fibre! 

I am a firm believer that dessert should be a part of every day. I have a big sweet tooth and I love finishing my lunch or dinner with a little sweet treat. However I also really like eating healthy, nourishing foods that make me feel good. And let's be honest, not a lot of sugar laden desserts make you feel good after. While there is a place for those decadent triple layer fudge cakes, an everyday quickie dessert that packs protein, fibre, and healthy fats is just the treat I want after a solid day of healthy eats.

What You'll Need

Apples and olive oil. You'll be giving the apples a quick cook in your favourite pan until soft and tender. 

Cinnamon, coconut sugar, and maple syrup. This trifecta will season those apples to perfection making them scream apple pie without all the heavy sugars and fats.

Plain vegan yogurt. I like Maison Riviera plain coconut yogurt.

Substitutions

Interested in skipping the protein powder and just making this a yummy dessert? You could swap the plain yogurt for vanilla yogurt, or try out a cocowhip topping instead!

I haven't tried this with another fruit, but cinnamon bananas are always delicious.

Apple Whip Pie Dessert

Recipe makes 4 servings (you can easily halve this if preferred)

Macros per serving

269 cals - 9g fat - 31g carbs - 16g protein 

Ingredients

  • 3 large apples or 4 small, chopped 
  • 1 tbsp extra virgin olive oil 
  • 1 tbsp maple syrup 
  • 1 tbsp coconut sugar 
  • 1 tbsp Ceylon cinnamon - if using Saigon cinnamon, reduce to 1-2 tsp
  • 1/4 tsp salt
  • 2 cups plain vegan yogurt
  • 60g vanilla protein powder (use discount code: EVANNRYAN)

 

Instructions:

  1. To a pan add chopped apples, olive oil, maple syrup, coconut sugar, cinnamon, and salt. Bring to medium low heat and cook, stirring often, until apples have softened. Depending on the size of your apple chunks this should take 6-10 minutes.
  2. Divide the apple mixture into 4 containers and set aside to cool.
  3. In a small mixing bowl add yogurt and protein powder. Whip together until super smooth. 
  4. Divide the protein yogurt across the 4 cooled apple containers and spread across the tops.
  5. Seal and refrigerate until you're ready for a sweet treat!
  6. Apple Whip Pie should last in the fridge in a sealed container for up to 4 days.

This was fantastic! I had some mediocre apples left offer and tried it and they SHINED in this recipe! Even without the topping the apples were amazing!
